Cinnamon Coffee Cake
This is an American style coffee cake – no coffee in the cake itself, it is to be eaten along with a cup of coffee! I made this recipe a few times now and it is nice and light.
1 cup flour
1/2 cup sugar
1 tbsp powder *
1 tsp cinnamon
1/4 tsp salt
1/2 cup milk
1 egg, beaten
4 tbsp unsalted butter, melted
Topping
2 tbsp sugar
1 tsp cinnamon
2 tbsp flour
1 tbsp unsalted butter, melted
1/4 cup nuts, either chopped or whole to put individually on top **
Preheat oven to 200C/400F
Mix together dry ingredients, sift if you are inspired.
Beat in milk and egg, then butter.
Pour into pan.
Combine all ingredients for topping.
Sprinke topping on top, including nuts if you choose.
Bake until fully cooked, about 10 minutes.
* tbsp = tablespoon, tsp = teaspoon. It matters because tbsp is more than double tsp. I always put a bit more powder than asks for to get a lighter bake, so be generous here!
** I have only put individual nuts on top – easier to avoid for the non-nut lovers. I most often leave the nuts out, and it is fine, though I do like the walnuts.
