Pumpkin Muffins
This is one of the first recipes where I found baking success, more than 20 years ago now. The cookbook “Country Baking” is now broken and in 4 pieces, but I don’t have the heart to throw it away. It’s old school and a wonderful record of Americana baking.
1 1/2 cups sugar
1/2 cup veg oil
2 eggs, lightly beaten
1 cup canned pumpkin (about 1/2 can)
1 3/4 cup flour
1 tsp soda
1/2 tsp powder
1/2 tsp salt
1/2 tsp nutmeg *
1/2 tsp allspice *
1/2 tsp cinnamon *
1/4 tsp ground cloves *
1/3 cup water
Preheat oven to 180C/350F.
Mix sugar, oil, eggs, and pumpkin.
Mix dry ingredients separately.
Alternately add dry ingredients and water to the pumpkin mixture.
Put into muffin tins and bake 12-20 minutes, depending upon size.
* I now sometimes use my combo pumpkin spice mix in place of the individual spices, but I’m putting this here in respect for the original spice balance.
