Chocolate Suprise Cupcakes

These chocolate cupcakes are a new favorite. They are simple to make and do not need to be frosted, plus a winner in my taste test with my neighbors.

120 g soft margarine
100 g caster sugar
2 eggs
170 g self rising flour
2 tbsp cocoa powder
Chunks of chocolate for molten center surprise *

Cream the margarine and sugar with an electric mixer. Add the eggs, then the dry ingredients. This is a thick batter.

Fill cupcake cases about half full with batter, then push in the chocolate which will be the center. Cover with batter so the chocolate is hidden. Bake until done, 15 – 25 minutes depending upon the size of the cupcakes. Serve warm.

* Chocolate must taste good in melted form, I used a 52% baking chocolate. You need chunks that work in the size cupcakes you are making, one per cupcake.
