Apple Crumble Muffins
These are my new favorite muffins, I have made several batches of these in the last few months including one this weekend. The original recipe was in an “Everyday Baking” book but for me, this is a fancy recipe with several separate layers. I’m not sure whose every day is so fancy!
Apple Crumble Muffins
1 – 2 sweet apples, depending upon size
Crumble
1/3 cup oats
1/3 cup flour
1/4 cup demerara sugar *brown sugar is fine too
1/4 cup butter
1/2 tsp cinnamon
Lemon Base
2 cups plain flour
1/2 cup wheat flour *can use all plain flour if you prefer
1/2 tsp cinnamon
1/3 cup oats
3/4 cup regular sugar
2 tsp baking powder
1/2 lemon juice plus zest
3/4 cup butter melted
100 ml milk
2 eggs
1 tsp vanilla
Cut up apples less than 1 cm square and squeeze some lemon juice on them to keep from browning. Set aside.
Measure milk and melt butter, then set aside to reach room temp.
Set up your tins for baking, no need for papers in mini-muffin tins.
Turn on oven to 350/180 to preheat.
Cut together ingredients for crumble. Set aside.
Mix dry ingredients for base. Add other ingredients one by one.
To assmeble muffins: Fill 2/3 with base, press in cut up apples (a few per muffin) then put crumble over top.
Bake muffins approximately 20 minutes for full size muffins, 12 minutes for mini-muffins, until browned and baked through.
If there is any extra apple and crumble, throw them together and make a bonus apple crumble!
