Baked French Toast
Today I had a half of a baguette that had gone stale. I remembered that I had found an excellent French Toast recipe years ago and managed to dig it up. It’s even better than I remembered!
3 tablespoons butter **
3 tablespoons honey **
Juice from one orange, approximately 1/3 cup
4 eggs
1/4 tsp cinnamon
dash of nutmeg
1/4 tsp salt
Thick slices of bread
Preheat the oven to 375F / 200C
Put the butter and honey in a 13 x 9 baking dish. **
Melt butter and honey together in oven, this takes about 5 minutes.
Meanwhile beat the eggs then add juice and spices.
Soak the bread in the egg mixture.
When butter is melted, take out of the oven and mix hot honey and butter together.
Lay the soaked bread in the honey butter
Bake until browned, about 15 minutes. Do not flip while cooking.
Serve by flipping upside down so honey butter is on top.
** This is to make a butter honey which the french toast bakes in. You need to have enough space in the baking dish for the bread to sit in a single layer, so if you need more space, add butter and honey to another dish. Note that the original recipe said you could use honey or syrup, but I’ve never tried it with syrup. I like the honey butter!
