Homemade Hummus
Hummus
1 can garbanzo beans / chick peas (same thing)
1/4 cup tahini
1/2 juicy lemon, start with a few squeezes
1/3 cup oil, canola or olive depending upon taste
1/2 tsp cumin
1/2 tsp salt
Fresh garlic (optional)
Put everything into a blender. Run blender and scrape down sides a few times, this will take a little while to incorporate all ingredients. Taste. Adjust according to taste, lemon and cumin are the strongest flavors, and the oil can be added until it is the right thickness. Reblend and retaste until you are happy with the hummus.
I make this so often that I do not measure. These numbers are approximate. I spend a lot of time in the reblend and retaste process. This is nice on sandwiches, with pita and chicken, or raw carrots. It keeps well in the refrigerator for a few days.
