Portabello Pizzas
4 large portabello mushrooms
2 tablespoons olive oil
4 tablespoons pesto sauce
1 cup mozzarella cheese
1/3 cup cooked sausage pieces, or your favorite pizza topping
Preheat the oven to 375.
Clean the portabello mushrooms with a damp cloth and cut the stems.
Place the mushrooms gills down on a baking tray.
Brush the top of the mushrooms with olive oil and season to taste.
Bake them mushrooms for 8 – 10 minutes.
Take the mushrooms out and flip so they are gills up.
Spread a tablespoon of pesto sauce on each portabello.
Spread cheese and toppings over, as you would small pizzas.
Bake another 8 – 10 minutes.
I’ve made this many times, working on the technique so it is more dependable. However, these measurements are approximate as I put them together by feel. I love the taste of these pizzas, and you can make them alongside pizzas on plain rolls for any fussy kids you may be feeding!
