Peanut Butter Cookies
Peanut Butter Cookies
Gluten Free and Dairy Free!
2 cups creamy peanut butter *
1 1/2 cups sugar
2 large eggs
2 tsp baking soda
a pinch of salt
1 tsp vanilla
Preheat oven to 350F / 180C.
Beat peanut butter and sugar with an electric mixer until fluffy.
Add eggs, then baking soda, salt, and vanilla
Roll the batter into about 1 inch balls then press with a fork, 2 presses perpendicular, the proper marking for a pb cookie.
Bake the cookies for about 10 minutes, until they’re puffy and golden brown.
Let them sit on the cookie sheet for a few minutes.
Transfer to a wire rack to cool.
* I used a smooth peanut butter that is 93% peanuts and the cookies were delicious. This pretty much takes a full 450g jar. It’s difficult to measure peanut butter. Next time I’m just putting in the whole jar!
