Pineapple Upside Down Cupcakes
The American classic “Pineapple Upside Down Cake” came up unexpectedly in a British book I recently read. The book A Tiny Bit Marvellous by Dawn French, a very amusing read, had a surprise ending – recipes! I love it when books integrate recipes and food. The Pineapple Upside Down cake played a comfort food role in the novel, and it’s something I’ve never made. I bought a pineapple recently and discovered that Ireland has very delicious pineapples, so I went ahead and tried to make them in cupcake form. They turned out quite fun and delicious.
I have since made these again, but I haven’t quite mastered the leavening, they rise too quickly and I have to chop off the domed top (or bottom once you flip them) so I will wait to post the recipe until I have it figured out.
