Oatmeal Raisin Cookies
3/4 cup margarine, room temp
1/2 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
1 1/4 cups flour
1 tsp cinnamon
1 tsp baking soda
2 3/4 cup oats, preferably whole oats, not quick oats
1 cup raisins, plumped*
Preheat oven to 350. Start plumping raisins if you choose, see note. Put together 3 dry ingredients (second set of ingredients) and set aside. In a large bowl, cream margarine and sugars. Add eggs and vanilla and keep stirring or beating until smooth. Add the dry ingredients in stages until fully incorporated, then add oats and raisins.
Shape into pressed rounds and place on an ungreased cooking sheet. Bake about 12 minutes or until lightly browned. This batter will save for a few days in a cold refrigerator, so you can set it aside and bake again at another time.
* Plumping raisins can be done quickly in a pot by covering with alcohol / fruit juice combo. This method is very forgiving, just cover with alcohol and boil. Rinse raisins in a colander and make sure they are not too warm when you add them as the end step of putting them in the batter.
